Caramel Salmon

Caramel salmon recipe

Serves 4


4 salmon fillets

1 tbsp olive oil

1 red onion- thinly sliced

2 garlic clove- crushed

3 tbsp soy sauce

½ cup brown sugar

3 tbsp fish sauce

Black pepper

1 tbsp lime juice

Heat a small amount of oil in a frying pan over high heat, add salmon skin side down in two batches and cook 2-3 minutes, then turn over and cook the other side for 1 minute, then remove from pan.

Reduce the heat to medium, add remaining oil to the frying pan, add onion and garlic and cook for 2 minutes, stirring.

Stir in soy sauce, brown sugar and fish sauce. Return salmon to the pan and cook for 2 minutes, or until the sauce is rich and syrupy. Sprinkle liberally with black pepper and stir through lime juice.

Serve with rice and steamed asian greens.
